The cherry is the fruit of the sour cherry tree. It resembles the cherry, but is smaller, softer and more acidic than the cherry. Cherries and sour cherries are the first fruits of summer to ripen. The cherry was the most desired cherry in Europe in medieval times. At that time it was consumed before meals as an aperitif, but also in soups, as it is still done today in Eastern Europe or for the preparation of the “kirsch”. Because of their sour flavor, they are usually used to decorate apples pie, as accompaniment for pineapple syrup or peaches syrup, as the main ingredient in candys, ice cream, jams, decoration, and accompaniment to roasts or game meats.
